Love, Laughter and Friendship

Knowing that I am loved...
Knowing that I have enough love to share with all the precious people in my life....
Reveling in the laughter that gives a glow to even the most mundane things around me ...
Cherishing the beautiful friendships that I am lucky enough to have ....

These are the things that I am thinking about this Thanksgiving day !!


I am off to spend this holiday with friends and family....
I will leave you with this Cranberry -Ginger Spiced Cider to mull over what you are thankful for this year..

Cranberry - Ginger Spiced Cider (Serves 2)

Ingredients :
2 C Apple Cider
1/4 C fresh cranberries
1 Tbs fresh ginger (minced)1 cinnamon stick
5 cloves
1/2 tsp coriander seeds

Method:
Combine all the ingredients in a pan and set to boil over medium heat.
Once the cranberries start to pop, lower the heat and simmer for another 15 minutes.
Strain the whole mixture and pour into glasses of your choice.

Enjoy !

I loved the tartness of the cranberries, the earthiness of the ginger and the warmth infused from the spices..
Perfect on a cold chilly day to enjoy with loved ones.
Use apple juice if cider is not available..

    Isn't cider a carbonated drink? Didn't realize you can boil it :)Can't imagine how it must taste ... but looks good. All healthy ingredients :)

    @Preeti - Apple Cider is just unprocessed apple juice which has high levels of potassium, iron and pectin and no added sugar or flavors :) Its not carbonated .
